Long or short, cold or warm, pasta is the perfect ingredient for colourful summer dishes. Not only is pasta ready in no time—it also pairs wonderfully with local seasonal foods for a fresh and tasty meal. Here are some great tips.
7 Tips for Perfect Pasta
1Add salt to boiling water. It will enhance the flavour of your pasta and keep it firm. Add 10 grams of salt for every 1 litre of water and 100 grams of pasta.
2Don’t put oil in your pasta water. It will coat your pasta and make it difficult for the sauce to stick.
3Don’t rinse cooked pasta under water. This will remove much of the pasta’s taste and make it difficult to blend with your sauce.
4Aim for al dente. Remove a piece of pasta two minutes before the time indicated on the package, then cut the pasta in half. Is it still white in the middle? If so, it’s not quite ready. Pasta is al dente when it’s almost translucent.
5Give fresh pasta the taste test. Since fresh pasta cooks faster, be sure to keep an eye on the recommended cooking time given by the manufacturer. Taste your pasta one or two minutes before the timer goes off to see if it’s done.
6Keep it simple. Fresh pasta is often stuffed with meat, cheese or vegetables—which means it’s bursting with flavour. One or two fresh ingredients and a light sauce are all you need!
7Cook the right amount. For a main course, calculate about 85 grams of dried pasta per person. Buon appetito!
