Basic Marinade

Basic Marinade

For the perfect marinade, just follow these easy steps:

  • 1/2 cup (125 mL) of a fatty ingredient to infuse flavours: oil, butter;
  • 2 tbsp (30 mL) of an acidic ingredient to tenderize meat and break down tough fibres: citrus juice, vinegar, mustard, yogurt, apple juice;
  • 1 tbsp (15 mL) flavourings for taste: herbs and spices, soy sauce, hot sauce, garlic;
  • Calculate at least 1 cup (250 mL) of marinade per kilo of meat.

Beer Marinades

Beer marinades not only add flavour, they also tenderize meat and fish. For the perfect pairing, serve your guests the same kind of beer used in your marinade. Our Spicy Marinade with Three Mustards and Beer is a great recipe to start with and pairs perfectly with red meat.

 


Dry Marinades

Dry Marinades

Also called rubs, these marinades are made from spice mixes that are rubbed into meat for a quick way to enhance flavour. You can find plenty of varieties in-store—or simply make your own rub at home!

  • Add a Mexican touch with spices like chili, chipotle, cocoa, and hot peppers.
  • Give meat a peppery kick with steak spices.
  • Spice up white fish with chili, cumin and coriander.

It's the perfect accompaniment to any meat or fish. Just a little goes a long way—turning BBQ season into something truly tasty!

Red meat:

BBQ sauce, fruit sauces (mint for lamb or berry for wild game), garlic and rosemary, flavoured butter, fruit ketchup.

Chicken:

Yogurt-based sauces, herb sauces, salsa, pesto, tapenade.

Pork:

Mustard sauce, spicy sauce, porto sauce, fruit sauce.

Fish and seafood:

Asian sauce, citrus sauce, spicy sauce, garlic sauce.
