These 10 easy steps will guarantee a perfect roast every time.
1Preheat the oven to 400°F/200°C.
2Place the meat in a roasting pan, fat side up.
3Season with fine herbs or a Dijon mustard-based mixture, but no salt.
4Brown the meat in the hot oven for 12-15 min.
5Reduce the oven temperature to 325°F/160°C (for veal roasts, reduce it to 275°F/140°C).
6Add just enough liquid (such as water, stock, vegetable juice or wine) to cover the bottom of your roasting pan. If you like, add a few vegetables (such as potatoes, carrots or parsnips).
7Insert a meat thermometer (as long as it's one that's meant for such temperatures).
8Continue cooking in the oven until the roast reaches the correct internal temperature.
9During cooking, baste the roast with pan juices to keep it moist.
10For a tender, juicy roast, remove the meat from the oven and cover it with a vented piece of foil. Let stand about 10 minutes to allow the juices to spread evenly throughout the meat.
