Rediscover Fries!

Rediscover fries

For fantastic fries that are quick and easy, choose any of Metro's four varieties of frozen fries: straight cut, crinkle cut, shoestring or diced and fried. Try them with delicious dipping sauces or spice them up with seasonings.

Roasted, Deep-fried, Pan-fried....

If you want crisp golden fries, deep-fry or pan-fry them in peanut oil. If you like your fries less fatty and more tender on the inside, roast them in the oven or toaster-oven. Store the fries in the freezer and take them out just before cooking.

Saucy Fries

While fries with ketchup and fries with mayonnaise are classic combos, many other sauces, both commercial and homemade, team up tastefully with fries. Barbecue sauce, brown sauce, hollandaise and béarnaise, sweet and sour sauce, tartar sauce...and the list goes on. The following recipes aren't carved in stone — feel free to play with them, varying them depending on your tastes, mood and available ingredients.

Three-mustard Sauce

  • In a bowl, combine 1/2 cup (125 mL) mayonnaise with 1/2 cup (125 mL) sour cream.
  • Add 2 tsp. (10 mL) Dijon mustard, 2 tsp. (10 mL) whole grain mustard and 2 tsp. (10 mL) Provençal mustard.
  • Add 2 cloves of garlic, minced, and pepper to taste.
  • Mix and chill about 20 minutes in the refrigerator.

Herb Sauce

  • In a bowl, combine 1/2 cup (125 mL) mayonnaise with1/2 cup (125 mL) plain yogurt.
  • Add minced fresh herbs (parsley, tarragon, chervil)...
  • Mix and chill about 20 minutes in the refrigerator.

Curry Sauce

  • In a bowl, combine 1/2 cup (125 mL) mayonnaise with 1/2 cup (125 mL) softened cream cheese.
  • Add 1 Tbsp. (15 mL) curry powder.
  • Mix and chill about 20 minutes in the refrigerator.

Andalouse Sauce

  • In a bowl, combine 1 cup (250 mL) mayonnaise with 3 Tbsp. (45 mL) tomato paste.
  • Add 2 cloves of garlic, minced, or 2 Tbsp. (30 mL) minced onion.
  • Add 3 Tbsp. (45 mL) finely diced red or green pepper.
  • Mix and chill about 20 minutes in the refrigerator.

Spicy Yogurt Sauce

  • In a bowl, combine 1 cup (250 mL) plain yogurt with 2 tsp. (10 mL) brown sugar.
  • Add 2-3 drops of Tabasco sauce, 1 tsp. (5 mL) ground coriander, 2 pinches of turmeric and salt to taste.
  • Mix and chill about 20 minutes in the refrigerator.

Looking to Spice up Your Life?

For oven fries with hot new flavour:

  • Mix 2 Tbsp. (30 mL) canola oil with 1 tsp. (5 mL) chili powder, a pinch of black pepper and a pinch of dry mustard. Spread fries out on a baking sheet, brush with spice mixture and bake.
  • Or when it’s time to turn the fries, halfway through their cooking time, sprinkle with one or more of the following: curry powder, garlic powder, Cayenne pepper, basil, rosemary or parsley (fresh or dried).
  • Sprinkle coarse salt on fries hot out of the fryer or skillet for that extra irresistible crunch.

Bruschetta Fries

For truly original taste, try the following recipe:

1Oven-roast shoestring cut fries according to package instructions.

2Meanwhile, spread a generous layer of commercial or homemade bruschetta in a plate.

3Transfer fries when done immediately from the oven to the plate of bruschetta.

4Cool for a few seconds. Then, mix bruschetta and fries with a spatula and serve.
