Heat oven to 450°F (250 °C).
Peel potatoes and cut into small wedges about ½ inch thick x 3 inches long.
Put potatoes in a large bowl filled with hot water and let soak for 10 minutes.
Drain the potatoes and thoroughly dry using a clean towel.
Place back in a large bowl and coat with olive oil.
Transfer potatoes onto a baking tray and carefully spread them out.
Bake 20 minutes or until a nice golden colour.
After 20 minutes, turn fries over and cook for another 10 minutes.
Remove from oven.
Transfer fries onto an absorbent paper towel and sprinkle with grated Parmesan, black pepper and salt.
Serve immediately.
