Perfect Turkey in 5 easy steps

Turkey is the star of the show on any holidays—and cooking it just right takes only a few simple steps. How do you ensure the meat stays moist and tasty? How big a bird do you need to feed your guests? We have some great tips that will wow everyone!


1Thawing

If you buy a whole frozen unstuffed turkey, you need to thaw it before cooking. The best way? Place your frozen bird on a tray on the bottom shelf of the fridge. It will take about 5 hours per pound, or 10 per kilo, to thaw.

You can also thaw your turkey in cold water. Stick the bird in a large bucket and cover completely with water, making sure to change your water about once an hour. It will take about an hour per pound, or 2 per kilo, for your bird to thaw.

Expert Tip

Did you know that you must never thaw a frozen stuffed turkey? Just place the frozen bird in the oven and follow the directions on the package.

2Brinning

Remove the giblets. You can also brine your turkey to maximize taste and tenderness.

3Seasoning

Butter, rosemary, Dijon mustard… Let your creative juices flow! If you’re going to stuff your turkey, estimate about ½ cup (125 mL) of stuffing for every pound (450 g) of turkey. Want to cook up something new? Try apples, pears, dried fruit, apricots, and cranberries mixed with thyme, savory and rosemary.

4Preparing

Place your turkey in a roasting pan breast-side up. You can also cook your bird on a grill in the bottom of a lasagna dish. Pour water or stock in the bottom of the pan and, if you wish, add a few chopped vegetables (onions, celery stalks, carrots). To cook your bird without fuss, insert a meat thermometer into the thickest part of the inside thigh meat, without touching bone.

5Cooking

Place your roasting pan in an oven preheated to 325ºF (160ºC) and cook uncovered, basting your bird about once an hour. The turkey will be done once the thermometer reaches 180ºF (82ºC) for a stuffed bird or 170ºF (77ºC) for one that’s not stuffed. Bon appétit!
