Place frozen chopped bananas and peanut butter in a food processor or high powered blender. Blend, scraping down sides if needed until smooth and thick.Transfer mix to a container and freeze 1 hour or until firm and scoopable. Sandwich 3 tablespoon mounds between cookies to make 10 sandwiches; return to freezer.Place chocolate bars and coconut oil into a resealable plastic bag and immerse into a bowl of hot boiled water. Let sit for 3-4 minutes until melted. Open bag and rest in place in a small cup.Dip each sandwich halfway into melted chocolate; lightly scraping excess chocolate against edge of cup.Sprinkle with chopped mini eggs and honey roasted peanuts if desired. Keep frozen until ready to serve.Serving: Makes 10 servings, 1 sandwich each.
