Preheat oven to 400 degrees.
Place flour, cocoa powder, sugar, instant coffee, baking powder and salt in a bowl. Mix well. Add oil, vanilla extract and soy beverage. Stir to moisten ingredients, being careful not to over mix. You want to obtain a fairly liquid consistency (there may be small lumps, which will break up during cooking).
Place two ramekins on a baking sheet. Put a large spoonful of frozen dessert in the bottom of each ramekin. Divide the dough between the ramekins, on top of the frozen dessert.
Bake for 13 to 15 minutes, or until slightly puffed and glossy. Let stand 10 minutes, then serve immediately.
*The cupcakes will continue to bake once removed from the oven, so let them rest for a while before eating them. However, if you wait several hours, they may freeze inside.
If you want to get a head start on this recipe, you can prepare the cake batter in advance. You can then preheat the oven, fill the ramekins and put them in the oven.
