Mini turkey meatballs
Put the rack in the middle position of a pre-heated oven at 425°F. Line a baking sheet with parchment paper.
In a large bowl, combine all the ingredients for the meatballs. Shape the mixture into mini meatballs and place them on the baking sheet. Cook in the oven for 15 minutes.
Soup
In a large pot, heat the olive oil on medium and brown the carrots, celery, onion, and garlic for 10 minutes and stir frequently. Add the nutmeg and chili pepper flakes and cook for another minute.
Add the bay leaves, broth, tomatoes, and beans and bring to a boil. Simmer on low for 10 minutes.
Add the cooked meatballs, kale, scallions, and basil and cook for another 2 minutes.
Season with salt and pepper to taste.
