Combine oil, vinegar, and basil.Seed and finely dice tomatoes.Combine tomatoes, diced bocconcini, and marinade in a bowl.Salt and pepper to taste.Mould mixture in ramekins and turn out onto plates.Drizzle with olive oil and a few drops of balsamic vinegar.
