Preheat the grill to high.
Peel and chop one of the yellow onions.
Place in a large bowl, and add the ground beef as well as one egg, the flour, the toasted sesame seeds, and the whipping cream.
Season with salt and pepper.
Separate and shape the mixture into 6 patties.
Peel and chop the second yellow onion. In a saucepan, sauté the onion with one tablespoon (15 mL) of olive oil.
Add the tomato paste.
Heat for 5 minutes, then add curry powder and Espelette pepper.
Season with salt and pepper.
Continue cooking for a few minutes, stirring. Set aside.
Grill the burger on direct heat to an internal temperature of 160°F (about 4 minutes per side).
Peel and slice the red onions into rings.
In a non stick pan, carefully crack 6 eggs, and cook for 2 to 3 minutes being careful not to break the yolks.
Split the hamburger buns and toast them.
Spread the spicy tomato mixture over the bottom buns.
Add some drained baby corn, then the patties and red onion slices.
Cover with a fried egg.
Season with a turn of the pepper mill.
Place the top bun on the side (so as not to crush the egg), and serve.
