Peel and mince the ginger and garlic.Place in a large bowl with the pork chops.Prepare the marinade.Add the brown sugar, vinegar, soy sauce and mirin to the bowl.Mix well to dissolve the brown sugar.Marinate for 10 minutes or more to enhance flavours.Meanwhile, cook the rice.Bring the water to a boil in a pot.Add rice, bring back to a boil, cover, reduce heat to medium and cook for 20 minutes.Remove from heat and let stand for 5 minutes.Blanch the broccolini in a pot filled with boiling water for 5 minutes.Add salt.Drain, rinse in cold water and set aside.Heat some oil in a frying pan over medium high heat until it is warm but not smoking.Add chops without marinade and sear until cooked, about 3 minutes per side or until it reaches an internal temperature of 160°F.Reserve the marinade.Set pork aside on a plate.In the same skillet, pour in the marinade and bring to a boil.Simmer a few minutes to reduce and thicken (2-3 minutes).Serve rice, broccolini chops and spoon marinade overtop.Source: Missfresh.com

    broccolini
