Tofu Tzatziki :
In a blender, blend tofu with olive oil and lemon juice until smooth.
Transfer tofu mixture to a bowl and mix in grated cucumber, garlic, and salt and pepper. Refrigerate.
Parsley Salad :
Toss all ingredients together and refrigerate.
Tofu Shawarma :
Mix dry spices in medium bowl. Add sliced tofu, gently toss to coat tofu.
Heat oil in a large non-stick frying pan on medium-high heat. Add sliced onions and cook for 3 minutes, then add the spiced tofu and soy sauce. Fry for 2 minutes per side, or until tofu is golden brown on all sides.
Serve in warm pita bread with parsley salad and tzatziki.
