Pat grated apples with paper towels to remove excess moisture. Set aside.In a bowl, cream butter and sugar together. Beat in egg, vanilla extract and apples. Mix in flour gradually. Add a few drops of food colouring.Knead the dough until consistency is smooth and even.Refrigerate for 2 hrs.Preheat oven to 350°F/180°C.Roll dough out 1/2 in. (1 cm) thick on a floured surface.Cut dough with a clover leaf cookie cutter.Bake cookies on a greased baking sheet for about 20 min.Serve with Irish coffee.
