In a deep frying pan, heat oil and butter. Sauté garlic, then add shrimp. Cook over high heat until colored. Remove from pan and keep warm.In the same pan, sauté onion over fairly high heat 5 minutes until tender.Add tomatoes, Cayenne pepper and paprika. Sauté 5 minutes or until tomatoes begin to turn into a purée.Put shrimp back in pan, add diced Canadian Raclette cheese and sauté 1 minute. Add coriander, season with salt and pepper. May be served with saffron rice or Valencian rice.
