Slice the shrimps lengthwise along the back and halfway down, and open so they will curl during cooking. Set aside.Melt butter and olive oil in a skillet over medium heat. Stir in the garlic and shrimp. Cook shrimp 4-5 minutes until they turn pink and tails curl.Add fresh Sunkist orange, lemon and pummelo segments to pan, and stir gently until heated through.Divide the spinach among 4 plates, forming a nest. Top each nest with 5 shrimps, garnish with segments of citrus fruit and pour cooking juices over the shrimp. Serve immediately.
