Put broccoli flowerets, 2 slices of cheese and some sliced black olives on each slice of prosciutto, then roll up prosciutto.Put rolls in a casserole and keep warm.Melt butter in a double boiler.Stir flour and cook until a ball forms.Add milk and cook until thick, stirring constantly.Reduce heat and simmer over low heat about 10 minutes.Pour over prosciutto rolls. Serve.

    broccoli flowerets, cooked

    Emmental cheese
  • 8
    black olives, pitted and sliced
  • 8
    thin slices prosciutto
  • béchamel sauce:

  • 2 Tbsp.
    (30 mL)
    butter
  • 3 Tbsp.
    (45 mL)
    flour
  • 2 cups
    (500 mL)
    2 % milk

  • Salt and pepper to taste

Preparation
