Preheat oven to 425 °F and line a baking tray with Selections parchment paper.
Gently separate the prosciutto layers, and cut the prosciutto in half ngthwise—confirming you have equal amount of slices to match the amount of cheese sticks and pear slices you are using.
Mix the maple syrup, mustard and black pepper, and divide in half. Set half aside for dipping sauce.
On a cutting board, brush a thin layer of the glaze on each slice of prosciutto with the remaining glaze.
Carefully wrap each cheese stick with a half slice of prosciutto in a corkscrew fashion, and place on parchment lined baking tray. Repeat until you have enough cheese sticks for your guests, saving enough prosciutto for the pears.
Brush the prosciutto with the maple mustard glaze, and wrap the pears in a similar manner.
Brush all of the wrapped cheese sticks and pears with another layer of the maple mustard glaze and bake. Bake for 10 min or until the prosciutto is crispy, and the cheese sticks are golden brown.
Remove from oven, transfer to cooling rack. Let cool 5-10 min before serving.
Serve with remaining dipping sauce.
