    Irresistibles pine nuts
  • 2 cups
    (45 g)
    top greens from about 1 bunch of fresh carrots
  • 1 cup
    (250 ml)
    extra virgin olive oil
  • 1/2 cup
    (125 ml)
    grated Parmesan cheese
  • 3
    cloves of garlic
  • 1 teaspoon
    (5 ml)
    salt
  • 1 pinch
    fresh cracked black pepper

Preparation

Toast Irresistibles Pine Nuts in a skillet over med-high heat for about 5 minutes stirring often and set aside to cool down.

Wash, trim and rinse the leaves of the carrot top and remove the thick stems

Pulse the Irresistibles Pine Nuts, parmesan, carrot tops, garlic, salt, and pepper in a food processor.

Add the extra virgin olive oil slowly while the food processor is still running.

Blend until the olive oil and ingredients have emulsified.

Top on bread or toss with your favourite pasta or salad.
