Place the grid in the middle of the oven. Preheat oven to 180°C (350°F).Combine mayonnaise, lemon juice, chives and sambal oelek. Add salt and pepper to taste.Spread butter on the outside of each slice of bread. Spread lemon mayonnaise on the inside of the bread slices. Spread on half of the bread, on the inside slices, the cheddar cheese, the lobster meat and the avocado slices. Finish with a final slice of cheddar and close sandwiches.In a non-stick pan over medium-low heat, add a drizzle of oil and grill the sandwiches.
