Preheat the oven to 375°F.
In a large bowl, add the kale leaves in chunks. Add the oil, lemon zest and combine.
Place the kale on a baking sheet. Sprinkle the nutritional yeast and mozzarella on top. Add salt and pepper to taste.
Bake for 10 minutes while regularly checking to make sure the edges of the leaves don’t burn. If they do, the kale will taste bitter.
