1. Combine tahini and lemon juice in a food processor for 1 minute.
2. Add olive oil, garlic, cumin and salt to the whipped tahini and lemon juice. Process for 1 minute.
3. Add half the chickpeas and process for 1 minute. Scrape sides of bowl, add remaining chickpeas and process until thick and smooth, about 1 to 2 minutes.
4. If hummus is too thick, slowly add 2 to 3 tablespoons of water while the food processor is on.
5. Adjust salt as needed. Serve hummus with a drizzle of olive oil and dash of paprika or sumac.
