In a small bowl, soak gelatine in 1/4 cup cold water. Let it stand 10 minutes. Combine 1 cup of water and sugar in a saucepan and cook on low, stirring constantly, until sugar has dissolved.Add gelatin and cook until it has dissolved. Turn the heat up and bring to a boil. Cook 15 minutes at a steady boil, without stirring. Remove from heat and cool until mixture is tepid.Add vanilla extract and beat with a hand mixer until mixture is white and thick. Rinse an 8-in. (20-cm) square metal cake pan.Spread mixture evenly in the pan. Refrigerate until set.Using cookie cutters, cut out marshmallow animals and roll them in icing sugar. Decorate with cake sprinkles.To make coloured marshmallows, add a few drops of food colouring.
