In a small bowl, soak gelatine in 1/4 cup cold water. Let it stand 10 minutes. Combine 1 cup of water and sugar in a saucepan and cook on low, stirring constantly, until sugar has dissolved.
Add gelatin and cook until it has dissolved. Turn the heat up and bring to a boil. Cook 15 minutes at a steady boil, without stirring. Remove from heat and cool until mixture is tepid.
Add vanilla extract and beat with a hand mixer until mixture is white and thick. Rinse an 8-in. (20-cm) square metal cake pan.
Spread mixture evenly in the pan. Refrigerate until set.
Using cookie cutters, cut out marshmallow animals and roll them in icing sugar. Decorate with cake sprinkles.
