Preheat oven to 375°F (190°C).Peel apples; slice thin and sprinkle with apple juice. Drain apples before to place in pie shell and bake 10 minutes.In a skillet, melt butter. Add brown sugar and cook, stirring constantly, until sugar caramelizes.Remove from heat and gradually stir in boiling water until sugar dissolves.In a bowl, mix cornstarch and flour, mix. Add the cream and whisk until creamy. Whisk gradually into caramel.Cook over low heat, until mixture thickens, and remove from heat.Cover with waxed paper and cool at room temperature for 30 minutes.Pour over apples and chill for at least 2 hours before serving.
