Crust:1. Mix together flour and salt in food processor. Add butter and pulse until mixture resembles coarse meal. Add ice water and cream. Pulse just until moist clumps form, adding more ice water if dough is dry, one teaspoon at a time. Turn out dough onto a lightly floured surface and form into a ball. Flatten ball into a thick disk. Wrap in plastic wrap and chill for at least 1 hour.2. Take out dough and let sit on the counter for a few minutes to soften.3. On a lightly floured surface, roll out the dough to an 11 inche circle, then gently place on a 9-inch tart pan. Press down into the pan and trim the edges with a sharp knife. Cover with plastic wrap and place into the freezer until filling is ready, about 30 minutes.4. Preheat oven to 350F.Filling:1. In a large bowl, mix together the sliced apples, cinnamon, nutmeg, lemon juice, ¼ cup of apple sauce, and corn starch. Toss gently to coat the apples evenly.2. Spread ½ cup of apple sauce evenly in the bottom of the tart pan.3. Place the sliced apple mixture onto the apple sauce prepared crust, in desired design.4.
