Preheat broiler.Cut top off loaf of bread. Pull out centre (save to make bread crumbs), leaving crust intact. Place cheese inside. Sprinkle evenly with garlic and tomatoes. Salt and pepper lightly. Drizzle with a little olive oil.Place loaf on a baking sheet and put in centre of oven. Broil for a few minutes until cheese starts to soften and the surface bubbles.Remove from oven, top with pine nuts and serve immediately with raw vegetables.
