Making the vinaigrette
In a bowl, whisk together the mustard and vinegar. Season with salt and add the oil in a thin Stream while whisking rapidly to create an emulsion.
Wash the green beans and remove the stems. Bring a pot of salted water to a boil. Boil the green beans, but make sure they retain some crunch. Cool immediately in ice water to stop the cooking process.
In a large bowl, combine the green beans, tomatoes, shallot, chives and some vinaigrette. Season with salt and pepper. Serve alongside grilled meats or enjoy it on its own!
