In a large bowl, combine all the ingredients for the filling and adjust the seasoning. Refrigerate the mixture for at least 1 hour.Place one lettuce leaf and a quarter of the cheddar cheese slices in each pita pocket. Place the filling between the cheese and the lettuce to keep the pita from getting soggy.Wrap well and refrigerate.

  • 3 Tbsp.

    vanilla yogurt

    madras curry powder
  • 1
    green apple, unpeeled, cored and diced
  • 1/3 cup
    (80 mL)
    celery, diced
  • 2 Tbsp.
    (30 mL)
    golden raisins
  • 1/4 cup
    (60 mL)
    pecans, chopped (optional)

  • Salt and freshly ground pepper to taste
