In a bowl, mix the juice and the dressing. Cover and refrigerate.In a large bowl, place the segments of Sunkist Minneola tangelo, spinach, walnut pieces, blue cheese, and the vinaigrette. Toss well.Divide the salad among 4 plates, placing it at the centre and surround with chicken slices. Pepper to taste. Serve.
