Brown the shallots in the walnut oil. Add the chicken livers and cook for 2 minutes. Add the garlic and citrus segments. Cook for 1 minute. Blend in the wine vinegar and maple syrup.Adjust the seasoning. Serve right away on a bed of lettuce. Garnish with the citrus zests.
