Preheat oven to 400°F.In a large bowl, stir together grated zucchini, eggs, shredded cheese, oil, mustard, herb de Provence, salt and pepper; stir in pancake mix and crushed Ritz crackers.Line a 12 cavity muffin pan with muffin cups and fill with 1/3 cup portions. Top with crushed Ritz and shredded cheese.Bake for 13-15 minutes until golden. Serve warm.Serving: Makes 12 servings, 1 muffin each.
