Bring water to a boil.Add cauliflower and coarse salt.Cook 4 minutes on medium. Drain.In a food processor, purée cauliflower.Add lime zest and juice and cream cheese. Season.Purée again. Adjust seasoning.This cauliflower purée is delicious with grilled fish.

    cauliflower florets, washed

    pinch coarse salt
  • 1
    strip lime zest
  • 1 Tbsp.
    (15 mL)
    lime juice
  • 1/4 cup
    (60 mL)
    light cream cheese

  • salt and freshly ground pepper to taste
