Pork on the Grill

Pork is great for the BBQ! Learn all about the best cuts, winning combos and some cooking techniques that are sure to deliver the best grilled pork.


Ideal cuts

There are several pork cuts that work best on the BBQ: filets, chops, tournedos, ground pork… and, of course, flavourful side or back ribs! Also, let’s not forget shank, shoulder and all the cuts that need braising to get that tender, juicy meat.

Grilling methods

Always cook meat over indirect heat, not directly over the heat source. For beautiful grill marks on the meat, oil the grill and rotate the meat a quarter turn halfway through cooking each side.

Internal temperatures for cooked pork

  • Medium: 160 °F (71 °C)
  • Medium to well: 170 °F (77 °C)
  • Ground pork: 160 °F (71 °C)

Set-aside time

Once cooked, wrap the grilled pork in aluminum foil. Puncture a few small holes and let sit about 5 minutes. This allows the meat to relax and the juices to circulate and be reabsorbed. It also helps even out the temperature of the meat.

1Stuffed Tenderloin

Grilling method:

Brush the cold grill with vegetable oil. Preheat on high for about 5 minutes then lower the heat to medium-high for cooking. Cook covered for 20 minutes.

Cooking temperature:

Use a meat thermometer. The internal temperature should be 160 °F (71 °C). After cooking, let the meat sit covered with aluminum foil for 3 to 5 minutes.

Great side dishes:

Sweet potato fries with rosemary, sautéed spinach with mushrooms, or caramelized pineapple. Potato salad is always a favourite!


2Rack of pork

Grilling method:

Preheat on medium heat for about 5 minutes then reduce to medium-low for cooking. Sear the meat on all sides on a greased grill and then transfer to an oiled sheet of aluminum foil. Cook on low heat for about 60 minutes.

Cooking temperature:

Wrap the bones in aluminum foil so they don’t burn. Aim for an internal temperature of 155 °F (68 °C) and let sit for about 15 minutes covered with foil.

Great side dishes:

Delicious with a squash couscous or mango and mozzarina salad drizzled with a refreshing citrus vinaigrette.


3Stuffed pork loin

Grilling method:

Brush the cold grill with vegetable oil. Preheat on medium heat for about 5 minutes. Sear for a few minutes on all sides then cook over indirect heat while covered for 50 to 70 minutes.

Cooking temperature:

Internal temperature should be 158 °F (70 °C) and then let sit for about 15 minutes.

Great side dishes:

Everybody loves a green bean salad topped with almonds and caramelized onions, or roasted baby potatoes seasoned with rosemary and lemon.
