Open-faced sandwiches are tasty, practical, and can be prepared in thousands of ways. It’s the perfect solution for a quick snack or a light meal any time of the day. Simply choose your favourite bread and let your creativity flow!
Vegetarian open-faced sandwiches
1Spicy mushroom and fontina cheese open-faced sandwich
Multigrain peasant bread + garlic + mushrooms + hot sauce +fontina cheese + scallions
Toast the bread. Cut a clove of garlic in two and rub the garlic on one side of the bread.
Sauté some chopped mushrooms in some oil with a bit of garlic and hot sauce.
Spread the mushrooms on the toast, garlic side, then top with some thin slices of fontina cheese.
Broil in the oven to melt the cheese. Add the scallions.
2Open-faced sandwich with fresh cheese, spinach, tomato, and poached egg
Country-style loaf + fresh cheese + baby spinach + cherry tomatoes + egg + pepper
Toast the bread. Spread the fresh cheese on the toast.
Add fresh baby spinach and halved cherry tomatoes.
Poach an egg and place it on top of the toast. Add salt and coarse pepper.

Traditional Belgian bread + lemon-infused olive oil + Boston lettuce + crab meat + fresh dill

Top with fresh dill.

Country-style loaf + cilantro pesto + cucumber + Nordic or medium shrimp + fresh cilantro
Spread a bit of the cilantro pesto on the slices of (To make cilantro pesto simply use a classic pesto recipe but replace the basil with the same amount of fresh cilantro)
Add some thin slices of cucumber and the shrimp.
Top with fresh cilantro.
Protein open-faced sandwiches
5Open-faced sandwich with goat cheese, prosciutto, and artichoke hearts
Flaxseed bread + goat cheese + prosciutto + artichoke hearts + Italian parsley
Spread the goat cheese on the slices of bread.
Pat the artichoke hearts dry and add them on top of your open-faced sandwich.
Add thin slices of prosciutto.
Top with fresh chopped Italian parsley.
6Open-faced sandwich with white bean puree
Spelt bread + white bean puree (beans + oil + garlic powder + ground sage) + cherry tomatoes (or black olives) + chives
Make the white bean puree in a food processor: add the canned beans, a bit of garlic powder, and a drizzle of canola oil. Pulse until you get the desired texture.
Add a pinch of ground sage.
Toast the bread. Spread the puree on the bread.
Add some halved cherry tomatoes or black olives.
Top with a drizzle of olive oil and chives.

Multigrain loaf + ricotta cheese + pears + mixed nuts + honey + fresh basil
Spread the ricotta cheese on the bread.
Add thin slices of pears.
Top with chopped nuts, a drizzle of honey, and fresh basil
8Open-faced sandwich with figs and apple butter
Walnut sourdough bread + apple butter or applesauce + fresh or dried figs + granola + maple syrup
Toast the bread.
Spread the apple butter or applesauce on the bread.
Add quartered figs.
Top with a bit of granola and add a drizzle of maple syrup.
