Savour poached eggs with pancetta

For a blissful breakfast, fry pancetta (Italian bacon) until crisp and crumble over soft-poached eggs. Sprinkle fresh tarragon or thyme, season with salt and pepper and serve with buttered toast.


Make a peameal bacon and fried egg sandwich

Layer peameal on a toasted English muffin with an over easy fried egg, a slice of ripe tomato and some baby spinach. Add a dash of honey mustard for great taste!

When no more bubbles appear on the surface of the water, add the eggs in their plastic packages. Cook 3-4 minutes. Remove one egg from the water and open the package to test doneness after 3 minutes.
