How to stir-fry tofu

Extremely versatile, woks can be used for frying, sautéing, simmering, even steaming—simply set a steamer basket over the liquid in the wok. Vary dishes with different seasonings like garlic, ginger and sesame seeds. Flavoured oils (peanut, sesame) and vinegars (raspberry, balsamic) add a special something that can make all the difference. Then there are the sauces (soya, oyster, Tabasco) that transform the mundane into the sublime. Mix and match them! Innovate! Experiment!
Five Steps to Wok Mastery:
1First off, always heat the wok over high heat.
2Then, add oil, turning wok to coat sides completely. If you want to reduce the oil, add broth or other liquid (ex.: orange juice).
3When adding ingredients, stir frequently with a wooden spoon so that they cook evenly and don't stick.
4Always cook pieces of meat, poultry or fish a little at a time. Set aside, then cook vegetables, leaving those that cook quickest (bean sprouts) to the end. Return everything to the wok and add selected spices and sauces.
5Cut foods the same size for even cooking.
