Preheat oven to 350°F (180°C).In a skillet, heat butter over medium-high heat, quickly sauté veal steaks to colour on both sides. Season to taste and set aside on a cooking sheet.Add oil to skillet and sauté mushrooms, and season.Cut cheese into thin slices but of the diameter as the veal steaks. Over each portion of veal, place a few leaves of spinach, cooked mushrooms and a slice of cheese. Add pepper and cook in the oven for 8-10 minutes.Serve with a tomato sauce or the cooking juices.
