Preheat the BBQ on medium high.
Add the turkey on a plate, coat with a bit of oil and the seasoning. Set aside in room temperature for about 15 minutes.
Cook the bacon until golden and a bit crispy. Place on a paper towel to drain and once cool, crumble.
Cook the turkey on the BBQ (or in a pan) for 3-4 minutes on each side. Set aside for about 5 minutes and slice.
Spread the mayonnaise and Dijon mustard on the tortillas.
Spread the sliced apple on the bottom half of the tortilla.
Add the sliced turkey and crumbled bacon on the lower half of the tortilla, on top of the apple slices.
Add the slices of cheese on top. Fold and press down.
Heat on a non-stick pan on medium high. Coat with a bit of oil. Cook the quesadillas for 3-4 minutes on each side or until lightly golden and the cheese has melted.
