Pre-heat oven to 425°F and line a baking tray with parchment.In a small bowl, stir together hummus, coriander and lemon zest.In a medium sized bowl, stir together remaining ingredients and spread onto lined baking tray. Roast for 15-20 minutes, stirring vegetables after 10 minutes of roasting.Toast the slices of bread and spread each slice with coriander hummus. Spoon roasted vegetables over hummus. Garnish with fresh coriander leaves. Serve warm. Enjoy!
