In a skillet, heat 1 Tbsp. (15 mL) oil and cook snapper fillets 2 min. per side or until fish can be easily flaked with a fork. Remove and keep warm.Add remaining oil and cook shallot and garlic. Add corn, fennel and pepper and cook 3 min.Mix lime juice and brown sugar together. Stir into vegetables. Add tomatoes and cook 2 min. more. Stir in coriander. Salt and pepper to taste.
