In a pan, melt butter, cooks leeks without browning. Salt.Add potatoes and water.Bring to a rolling boil 15 minutes. Remove from heat and set aside.Add cream. Season.Serve right away.Add a few croûtons and some grated cheese to the soup when serving.

  • chervil, thyme to taste
