Pears:Peel and core pears on the underside.Rub pears with lemon to prevent discoloration. Set aside.Combine wine, sugar and nutmeg in a saucepan and bring to a boil.Lower heat and poach pears for 8 minutes. Do not boil.Remove from heat and cool pears in the syrup.Chocolate Sauce:Melt butter and chocolate in a pan over low heat. Remove from heat.Whisk in coffee, icing sugar and milk.Return pan to heat and bring to a boil. Lower heat and cook 5 minutes on low, stirring constantly.Remove from heat and stir in vanilla.Serve hot with pears.
