Preheat oven to 350°F (176° Celsius).Unwrap ham and rinse under cold water. Take pineapples slices and place over the entire ham, using the cloves and cherries to stick them into the ham and keep them in place.Place ham in the rack of roasting pan and cover with foil and roast for 30 mins.Meanwhile, combine brown sugar/honey, black pepper and pineapple juice in a sauce pan over medium heat, until the mixture is smooth and the sugar is dissolved.Pour the brown sugar/honey glaze mixture over the ham and continue roasting for 45 mins, basting at least 2-3 times with the drippings in the roaster.Check for doneness by using a thermometer. It should read 160°F.Let the ham stand for about 15-20 mins before slicing to allow the juices to set.Notes:Let the ham stand for about 15-20 mins before slicing to allow the juices to set.Adjust the honey or sugar to your taste.To adjust the total roasting time for a smaller or larger ham, calculate 20 mins per pound.You can also use chicken or lamb in this recipe.
