Brown the shallots in the butter.Add the pears or apples, honey, nutmeg and wine. Reduce by half.Blend in the demi-glace. Simmer for 2 minutes.While whisking, blend in the butter, one small cube at a time. Do not allow to boil.Add the lemon juice.Correct the seasoning. Set aside.Cook the ostrich steaks in a frying pan over high heat for 3 to 4 minutes per side.Serve napped with the sauce.
