Preheat oven to 325°F.Drain and rinse your black beans and pat them down lightly with paper towels, line them on a baking sheet, and bake in the oven for 10-15 minutes.Over medium heat on the stovetop, add your olive oil and lightly pan-fry your chopped onion, bell pepper, and minced garlic until the onion starts to brown. Once cooled, lightly pat down with a paper towel.For a vegan option: cook your 1/3 cup sweet potato to your desired method. A quick option is to peel and score your sweet potato down the middle, without cutting it completely in half, and place it in a shallow bowl with some water and microwave on high heat for 8 minutes.Once the above steps are complete, add all ingredients to a food processor or high-powered blender and pulse until everything is blended leaving a thick or chunky texture.Preheat oven 375°F and lightly grease a parchment paper-lined baking sheet.Form your mixture into patties - the larger the patty, the longer time it will need to cook. For this recipe, I used 1/3 cup per patty as a measurement.Bake at 375°F for a total of 20 minutes - flipping patties halfway.Remove from the oven and serve with your preferred toppings and sides. I think these burgers pair perfectly with a side of nachos and salsa or guacamole!
