Preheat oven to 425°F.
Cut chicken into strips.
Thinly slice onion, jalapño and bell pepper.
Place chicken, spice mix and olive oil in a bowl. Mix well.
Add bell pepper, onion and jalapeño and season with salt and pepper to taste.
Toss, making sure everything is well coated.
Place all ingredients from the bowl on a baking sheet lined with parchment paper, very well spread, to make a single layer.
Place in oven and bake 20-25 minutes, or until chicken is cooked through (until it reaches an internal temperature of 165°F).
Remove from the oven and toss everything together with lime juice and cilantro leaves.
Divide chicken mixture among tortillas and top with cheese and salsa. Serve with sour cream.
