In a small bowl combine all the dressing ingredients together and mix well. Taste, adding lemon juice, salt and pepper to taste.In a large bowl combine the beans, lentils, artichokes, onion, parsley, peppers and dressing. Mix well, cover and let stand 10 minutes.While the salad is marinating, heat 1 tsp. of oil in a frying pan over medium heat. Sauté the Sweet Curry Carrot strips for 3-4 minutes.
