In screw-top jar, combine oil, vinegar, mustard and salsa. Cover and shake until well combined; reserve 2 tbsp (30 mL). Pour remaining dressing over cheese cubes. Cover and marinate at room temperature 1 hour.
Meanwhile, brush beef with reserved dressing and barbecue to desired degree of doneness; let cool.
To serve, cut beef into thin slices. Line 4 individual plates with lettuce. Arrange meat, tomatoes, avocado and cucumber on lettuce. Spoon cheese cubes and dressing over all. Serve with warm flour tortillas.
