Cut apples in half removing cores with a melon baller or paring knife. Arrange halves cut side up in a 9x13-inch baking dish.
In a small bowl combine instant oatmeal and melted butter stirring until well mixed. Spoon about 1 tbsp of oatmeal topping onto each apple.
Combine 1/3 cup (75mL) maple syrup and lemon juice in a small bowl and drizzle over apples. Cover with foil and bake for 15 minutes. Uncover and bake further 10-15 minutes until apples are fork tender.
Meanwhile, combine pecans, 3 tbsp (45mL) maple syrup and pinch of salt in a nonstick skillet. Bring to a boil stirring frequently until syrup has reduced to a thick coating over pecans. Scrape onto a parchment-lined plate to cool.
Spoon 100g skyr yogurt each into 8 shallow bowls or plates. Nestle apple halves into each bowl spooning any juices onto skyr. Garnish with candied pecans, lemon zest and cinnamon.
