Preheat oven to 425F. Spread the tater bites on a parchment lined baking sheet. You will need 4 taters for each mac & cheese & tater bite, so if using a 6 well muffin tin you need 24 taters and 48 taters for a 12 well tin.
Once oven is ready, bake the tater bites for 10min.
Remove from the oven and let cool for a few minutes. Carefully (they will be hot!) place 4 taters in each of the wells of your muffin tin. Using a spoon (or a mortar if you have one), press down and mold the tater bites into the shape of the well to form a cup.
Return muffin tin to oven and bake for 10min.
Now, prepare your mac & cheese (follow instruction on box)
Once the 10min are up, remove the muffin tin from the oven. The mac & cheese should be ready now. Using a spoon, scoop the prepared mac & cheese into the tater bite cups.
Next, sprinkle the seasoned panko breadcrumbs over the tops of the bites. Spray the tops with a bit of cooking spray.
Return muffin tin to oven for 5min and then remove. Let the bites sit and cool in the tin for approximately 10min before removing from the tin.
